Yet, as rich of a story the cookery holds, there is an equal – if much lesser known – beverage narrative. Specifically, ABC Kitchen’s selection of wine is laudable for its dedication to organic, sustainable, and/or biodynamic wines (an astounding 100 percent of the wine list falls within this designation).&lt;br /&gt;&lt;br /&gt;One area of particular interest for us – and for the team at ABC Kitchen – is that of biodynamics. To understand more about this type of wine, we connected with Emma Germershausen and Ann Marie Del Bello, manager and sommelier at ABC Kitchen, respectively. Biodynamic agriculture, they explained, is not just a way of farming – it is a way of thinking. Adherents of biodynamic philosophies often go misunderstood because of the lack of mainstream awareness and misinformation around the practices. According to Ann Marie and Emma, the best way to understand this way of farming is to go straight to the source.&lt;br /&gt;&lt;br /&gt;This, in our case, would require visiting Shinn Estate Vineyard, a winery / bed and breakfast located on Long Island’s North Fork. It has recently participated in research on Caíño Blanco in collaboration with both the Spanish National Research Council (CSIC), in the area of Oenology, and the Galician Biological Mission to determine its wine-making characteristics. &lt;br /&gt;&lt;br /&gt;This variety, recovered by TERRAS GAUDA as the result of an R&amp;D+i project, was used to produce 6,700 bottles of the first vintage of the only wine of this type on the market: LA MAR. Around 20,000 bottles of the second vintage will soon be available on the market. The winery owns more than 20 hectares where it grows Caíño, representing around 95% for the entire Designation of Origin.&lt;br /&gt;&lt;br /&gt;These advances in the area of R&amp;D+i coincide with an increase in market share following the acquisition of the Ribera del Duero winery QUINTA SARDONIA, which has provided significant added value for positioning TERRAS GAUDA in the high-end wine sector. The Group has kept up with its sales forecast for the Spanish market this fiscal year, in spite of the current economic situation, and has expanded to new international markets during the last few months. &lt;br /&gt;&lt;br /&gt;TERRAS GAUDA Wineries has begun to market their wines in India (in a Wine Club with more than 8,000 members), Latvia, Estonia and Curaçao. New distribution agreements have also been reached in two countries with great potential: Brazil and China, considered strategic for the winery. Dan tells us about his experience and tips for selling Soave wine.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tell us about Soave month at Eataly (May 2011).&lt;br /&gt;In May, 2011, Eataly and Soave teamed up for a memorable month of Soave-related events. More than 12 different Soave wines were featured throughout the restaurants and the Eataly wine shop. Included in the promotion were consumer tastings and classes, special food and wine pairings, and wine-related conferences. On display were the versatility, approachability, and elegance of one of the most important appellations in Italy. We estimate that more than 50,000 people were exposed to the splendors of Soave during the promotion in the store alone.&lt;br /&gt;&lt;br /&gt;Who is the typical Soave drinker these days?&lt;br /&gt;The beauty of Soave is that it's seemingly timeless. In the United States, Soave was one of the appellations that provided the foundation for the Italian wine market, and the name, "Soave", conjures up great memories for the baby boomers who indulged in Soave wines during the 60s and 70s. Now there's a new generation of twenty-somethings discovering Soave wines. Those who stay loyal to the appellation are those who prefer, enjoy, and appreciate clean, mineral, fresh, and exuberant whites.&lt;br /&gt;&lt;br /&gt;How do you make the sale with Soave? What is its biggest selling point?&lt;br /&gt;While I find that many northern whites are expressive of their climate and soil, Soave wines seem to cater to the crowd that prefers more floral and aromatic qualities. Grapes like Friulano, Sylvaner, Trebbiano, and Arneis often produce racier and more mineral-driven wines, which are excellent in their own right, but Garganega is unique in that the and intoxicating aromas always put it over the top.&lt;br /&gt;&lt;br /&gt;Do you recommend Soave as an aperitivo wine?&lt;br /&gt;Soave is exceptional as an apertivo as well as a first or second course wine. I prefer to serve Soave with passed finger foods, cheeses, cured meats, and grilled fish dishes.&lt;br /&gt;&lt;br /&gt;Do you notice Soave wines selling better with screwcaps or corks (or no difference)?&lt;br /&gt;No difference&lt;br /&gt;&lt;br /&gt;Have you seen sales of Soave rise in recent months/years?&lt;br /&gt;Soave is a bit cyclical. In the past few years it's been more popular, in part, because demand for Pinot Grigio and other white wines has waned.&lt;br /&gt;&lt;br /&gt;How are Soave wines priced compared to other Italian white wines?&lt;br /&gt;For the most part, Soave wines are still priced very competitively compared to other northern white appellations and they're good additions to any serious wine list or retail shop.&lt;br /&gt;&lt;br /&gt;What do you make of the idea of white wines for winter? When is it appropriate to drink Soave in winter?&lt;br /&gt;Just because the mercury drops doesn't mean it's exclusively red wine season. Crisp whites like Soave are great accompaniments to hearty stews and broths, and other rich comfort foods. Soave is also a great option when you're cuddled up by the fire with a loved one.&lt;br /&gt;&lt;br /&gt;Are you seeing any trends in white wine, generally?&lt;br /&gt;A lot of producers seem to be scaling back on oak aging for white wines. Many wines that were once hit with smaller, newer oak barrels are now seeing larger and neutral wood. The resulting wines are lighter, fresher, and the acidity shows better in the first few years after bottling.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;Dan Amatuzzi is the Beverage Director at Eataly in Manhattan. "I cannot believe it," said Annika Strebel. The 23-year-old student from a small wine town in Rheinhessen is the 63rd German wine queen. This is the first time since 1999 that a German wine queen is from Germany's largest wine growing region.&lt;br /&gt;   &lt;br /&gt;A 80-member jury from politics, media and the wine industry chose the young Rheinhessin on September 30 in Neustadt on the Wine Route to be the highest representative of German wine.&lt;br /&gt;&lt;br /&gt;"This is a great day for the Rhineland-Palatinate wine," said Annika Strebel. The 23-year old already knew as a little girl that she wanted to become a winemaker. She is currently studying at the renowned wine-growing college Geisenheim. For pleasure, she likes to collect wild herbs for the kitchen and grow her own pumpkins. In the next year, Annika will represent the German wine industry at home and abroad.&lt;br /&gt;&lt;br /&gt;She is assisted by two wine princesses, Ramona Storm and Elisabeth Born. The 22-year-old Ramona Storm comes from Moselkern and studied mathematics and economics education. The daughter of a winemaker, Storm, among others, had to explain why the year 2011 was good and why the terms on wine labels are particularly important in the preliminary round. In the final, she talked with passion and enthusiasm about representing German wine in the world beyond.&lt;br /&gt;&lt;br /&gt;The 26-year-old Elizabeth Born charmed the judges with her natural charm. The 26-year-old has been studying and working in the vineyard with her parents in Höhnstedt. Her grandfather had the first vineyard, where they grow very innovative Sauvignon Blanc. Her experiences also include wine in New Zealand and South Africa - the combination of charm and experience makes Elizabeth a perfect German Wine Princess.&lt;br /&gt;&lt;br /&gt;The decision of the jury was actually as difficult as ever: six young ladies had been in the hall of Neustadt on the Wine Route facing the critical eyes of the jury and an audience of millions on their TVs.&lt;br /&gt;&lt;br /&gt;The election of the German Wine Queen occurs each year, beginning with the selection of the regional wine queens of the thirteen German wine-growing regions. The young ladies, aged between 21 and 26 years, had to prove extensive specialized knowledge of viticulture and wine marketing. Annika Strebel since proved that difficult technical issues such as Blanc de Noir can be explained naturally and professionally.&lt;br /&gt;&lt;br /&gt;On the evening of September 30, the likeable blonde with the long braid shone above all with her charm, spontaneity and naturalness. They were impressed by her detection of the flavors of a 2007 Riesling Trockenbeerenauslese, including honey, ripe peach and pineapple. When presenting technical terms of wine on an open stage, Annika had wild enthusiasm: her description of the sex pheromone of the grape was so convincing that the hall was enraptured.&lt;br /&gt;&lt;br /&gt;"I have a little resemblance to the Loreley," Strebel said, referencing her fictional speech to delegates in Middle Rhine. She would "tell no tales and sink a ship, but with charm and passion, bring the German wine ahead." As the German Wine Institute (DWI) in Mainz announced, a total harvest of approximately nine million hectoliters is expected, according to the latest estimates.&lt;br /&gt;   &lt;br /&gt;The yield moves above the national average for the first time in the last ten years and is 30 percent higher than the previous year's unusually low yield of 7.1 million hectoliters. Only in Franconia, Württemberg, where the strong May frosts have caused damage, is this year's wine harvest similarly low as in 2010.&lt;br /&gt;&lt;br /&gt;According to DWI-director Monika Reule, the vintage fits very well in the current market situation: "After the very small 2010 vintage cellars were well cleared, the demand could not be satisfied in full. We are confident that with the 2011 vintage, we will win back the excellent relationship between price and quality wines which lost market share last year."&lt;br /&gt;&lt;br /&gt;This is confirmed by the recent survey of European crop estimates, which expects about 164 million hectoliters, with a slightly below average wine production. In particular, Germany's most important wine importing country, Italy, is expecting a harvest decline of 15 percent, which would help the domestic market.&lt;br /&gt;&lt;br /&gt;"Given that nationwide they saw a good harvest and supply, the industry expects the 2011 vintage to have largely stable prices," said the president of the German Winegrowers' Association, Norbert Weber.&lt;br /&gt;&lt;br /&gt;"In qualitative terms, the 2011 vintage can be nothing but desired," says Weber. "A large part of the autumn harvest reached the level of quality wine. The wine lovers get a lot of wine for the money in the 2011 at all levels of quality and can draw on unlimited resources, "said President of the vineyard.&lt;br /&gt;&lt;br /&gt;The young white wines already have a pronounced fruity balance and harmonious taste. The aroma is dominated by the full maturity of the vintage. For red wines, consumers can look forward to colorful and dense droplets. The glorious late summer also has produced exceptionally good sweet specialties. The 2009 Pinot Noir Eola Amity Hills of the Argentine winery, Antica Terra and the 2008 Au Bon Climat Isabelle Pinot Noir from California took the first and second rankings. The ranks of four to seven, and nine and ten also went to Germany at the wineries Paul Fürst (Franken), ornamental iron (Baden) with two wines, Gutzler (Rheinhessen), Stodden (Ahr) and Heitlinger (Baden).&lt;br /&gt;&lt;br /&gt;The 13-member international jury, which was comprised of, among others, the British wine critic Jancis Robinson and Master of Wine Tim Atkin, was completely surprised by the outstanding qualities and stylistic diversity of the German plants. "This great performance of German Pinot Noir here has absolutely astounded the experts," said DWI-marketing manager of the German Wine Institute, Steffen Schindler, from London. "We realize this challenge, because we were convinced long ago by the international competitiveness of our Pinot Noir. This happened when the larger Veronese wineries promoted Soave on all the national and foreign markets, and today this wine has earned the coveted description “Classic eminent Italian white wine” and the prestigious status as the most exported Italian white wine.&lt;br /&gt;&lt;br /&gt;Back in 1931 Soave was the most important Italian wine and was recognized as a “typical and prestigious” wine. Its identity was definitively protected by recognition of the controlled designation of origin in 1968 (DPR August 21, 1968).&lt;br /&gt;&lt;br /&gt;The basic grape varieties used in Soave are Garganega (gar-gah-NAY-gah) and Trebbiano di Soave, which are both cultivated by the impulse of nature and the patience of wine growers. Trebbiano di Soave has traditionally always been present in the vineyards, though it has gradually given way to the more exuberant Garganega.&lt;br /&gt;&lt;br /&gt;Eons ago, the Soave area was covered by a tropical sea, as evidenced by saline sediments in the soil that are expressed in Soave wine, with its rich mineral quality and distinctive fresh, clean and fruit-forward flavors. In the 13 weeks ending during the same period (September 17, 2011), sales increased almost 4 %. Domestic wine outsold imports, increasing 5%, while imports fell 1.5%. The $20-plus and $9-$11.99 categories had the fastest growth in terms of value and volume: The $20-plus segment grew nearly 9% in value and 10% in volume, while the $9 and up category grew by 8% in value and close to 10% in volume. The $15-$19.99 price category showed a similar growth rate, increasing 7% in value and 8% in volume.
